How To Fillet A Fish

Local legend, fisherman extraordinaire and chef, Andrew Mirosch is showing us the best way to fillet a fish.

For today’s how-to, we’ve got our hands on a rod-caught snapper from Stradbroke Island, as fresh as it gets!

As Andrew says himself, it may not come out perfect but it comes out pretty well! And that’s good enough for us.

Start by making sure you have a sharp and flexible knife and have already scaled the fish.

His method is to make sure you keep as much flesh as possible and to get rid of all the little bones that will get in the way. It’s almost impossible to stuff up.
