Prawn And Sand Crab Stack With Mango And Avocado

When we think of summer recipes, you just can’t go past amazing fresh seafood that Australia has on offer. This prawn and sand crab stack is so simple to put together, and oh so delicious. You’re about to be the envy of the caravan park!

Ingredients

  • 4 tall ring cutters (or PVC pipe cut offs)
  • 1 mango diced 
  • 1 avocado diced 
  • Juice of 1 lemon 
  • Hot sauce or tabasco 
  • Pinch each salt and pepper 
  • Spicy mayonnaise, to taste 
  • 16 prawns cooked, peeled 
  • 200g sandcrab meat 
  • Salad or herbs to garnish 

The Recipe

  1. Combine avocado with mayonnaise, lemon juice, salt and pepper. Divide between cutters/moulds 
  2. Top with mango and use the back of a spoon to press down 
  3. Add crab, then remove pipe 
  4. Serve topped with fresh prawns and salads or herbs of your choice
