Chilli Lime Chicken Skewers Recipe

We all know the caravan life is more about full time snacking than big sit down meals. Here’s a great chicken skewer recipe that will go down a treat at the next happy hour!

Ingredients

6 skinless, boneless chicken thighs
2 spring onions
1 handful flat leaf parsley
2 garlic cloves
¼ tsp cayenne pepper
2 tbsp lime juice
2 tbsp olive oil

Chilli Lime Dressing

3 tbsp lime juice
2 tbsp olive oil
3 tbsp finely chopped leaf parsley
2 tsp finely chopped rosemary
1 large red chilli
4 spring onions, thinly sliced

Instructions

  1. Cut each chicken thigh fillet into four pieces and place in a ceramic dish or bowl. Put the spring onion, parsley, garlic, cayenne pepper, lime juice and olive oil in a food processor and process to a paste. Rub all over the chicken. Cover and refrigerate overnight
  2. 40-minutes before cooking, make the chilli lime sauce by combining all the ingredients in a bowl. Pour over 125ml boiling water, stir to combine and set aside
  3. Soak eight wooden skewers for 30 minutes
  4. Remove the chicken from the fridge 30-minutes before cooking. Thread the chicken onto skewers, three pieces on each
  5. Preheat the barbecue grill to high
  6. Cook the skewers for eight to 10 minutes, or until cooked through, turning often. Place skewers over a green salad and spoon the sauce over to serve
